Cooking without overcooking
For salads, vegetables are cooked as cubes or slices. Continuous steam cooking with many injection points makes sure all pieces become equally tender and none fall apart.
Mixing without crushing
Cooked vegetables are delicate. Salad mixers with a screw flight loosen the product while mixing, and dressing and further ingredients are dosed in. The mixing time is controllable and can be set per recipe.
Vegan from the recipe up
Whether a salad is vegetarian or vegan is decided by the dressing. Vegan mayonnaise, oil-and-vinegar marinades or plant-based yoghurt run through the same machines as classic recipes. For labelling, clean separation at product changeover is what counts.
Seasoning in the drum
For seasoned vegetable pieces, a seasoning drum doses the spice by weight and distributes it evenly via tumbling profiles. This way every batch tastes the same.
