EIMA Food Processing – Veggie Production

Raw material

Potatoes as the basis for veggie products

Potatoes are the basis of many veggie products: they bind burger mixes, are the main ingredient in potato salad and go to commercial kitchens peeled and pre-cooked.

Potatoes

What potatoes are used for

Cooked and mashed as the binder in burger mixes and patties, diced in potato salad, peeled and vacuum-packed as convenience, pre-cooked for foodservice.

Starch as a natural binder

Cooked potatoes bring starch that holds veggie mixes together. The more evenly they are cooked, the more predictable the binding from batch to batch.
